I am 99% sure that the Denmark controls the baltic egress and that no sub passage is allowed. DO you have your book handy, to make sure?

You are correct on both counts.
Taking Denmark on the US turn would prevent Germany from attacking through it, even with subs, because you have to own it at the beginning of your turn to use it.
Subs can only pass through the Straits of Gibraltar as an exception to this.
