What is the best painting method to just turn pieces white? Spray, brushed on model paints etc. Undercoat needed? Etc… Any tips would be really appreciated.

Krylon Fusion spray. It’s designed specifically for for plastics (bonds to them perfectly).
The most important part is to spray several very light coats to get it even. If you try to do it in 1-2 coats you’ll end up with blobs of paint and possibly a tacky feeling for far longer than expected (if not forever).
I spray mine with a white primer, then a white paint. I then use a finish to protect the paint.
Make sure you turn the piece white with the primer, the paint dos not cover as well as primer.
